Potato-Brinjal Curry


Potato-Brinjal Curry is a Quick recipe
It goes well with Curd Rice




Ingredients 

Brinjal - 4
Potato - 4
Onion - 1
Tomato - 2
Turmeric Powder - 1/4 tsp
Chilli Powder - 1/4 tsp (if needed)
Corainder Powder - 1/2 tsp
Curry Leaves - 1 twig
Oil, Sugar and Salt 

For Seasoning

Mustard - 1/4 tsp 
Cumin - 1/4 tsp
Split urad dal - 1/4 tsp
Curry leaves
Red chillies - 4 (dont split)


Method

Scrape potato and dice it. 
Cut brinjal into cubes. 
Cut onion and tomato into thin slices. 
Keep kadai on stove. 
Pour oil, add mustard, cumin, split urad dal, curry leaves, red chillies and wait to splutter. 
Add the powders and fry till raw smell goes.
Add the diced veg. and water and salt.
Cook well till it is done.

Now...you get a nice side dish for your curd rice....
