Vegetable Red Curry

Vegetables Red Curry 

Vegetable Red Curry has all the vegetables, prominently Beetroot, which gives the light red colour to the curry. Add peas also, if you want. 
Goes well with all Indian rice recipes like Plain rice, Jeera rice, Fried pepper rice, Pudhina rice.

Cooking Time : 10 mins
Total : 25 mins


Wash & Cut the vegetables in cubes. 
Beetroot ( 1 Medium)
Carrot ( 1 Medium)
Capsicum (1 Big)
Big Onion (2 Medium)
Tomato (4 Medium) 
Green Chilly (4) 
Potatoes, boiled (3)

For Grinding :

Coconut scrapped (2 tbsp)
Red Chilly (5)

Ginger Garlic Paste 
Ginger (1 inch)
Garlic (6 or 7 cloves)

First keep pan on stove. 
Pour oil (2tbsp)
Put Anise (2), Cardamom (2)
Cinnamon (2), Cloves (4)
Fennel seeds (1 tsp)
Fry them well. 

Put Onion, green chillies and the cut vegetables
Fry well.

Add salt & pour little water.
Cook till vegetables are soft.  
Add boiled potatoes. 
Stir well. 

Keep a kadai on stove.
Pour oil
Add Ginger Garlic paste.
Fry till the aroma rises. 

Put the ground masala & 
Fry well till the raw smell disappears

Add this masala to the cooked vegetables.
Stir & Cook for a minute or so.

Serve with any spicy rice like Jeera Rice or Pudhina Rice.
