 Brinjal Onion Masala


Brinjal (1/2 Kg)

Onion (3)

Chilly Powder (1 tsp)

Coriander Powder (1 tsp)

Turmeric Powder (1/2 tsp)

Rock Salt Powder

For Seasoning 

Red Chilly (4)

Mustard (1/2 tsp)

Curry Leaves (1 twig)

Split Urad Dal (1 tsp)

Oil (1tbsp)


Cut Onions lengthwise. 

Take bigger brinjals and cut them into lengthy pieces. 


Keep the brinjals in water as it wont turn into brown. 

Keep Kadai on stove. Add Oil, Mustard. When it splutter, add Urad Dal. 

Add Red Chillies. 

Sauté & Add Onions, Curry Leaves. 

Add Turmeric Powder & Salt. 

Add Chilly Powder, Coriander Powder. Sauté till the raw smell of the powders disappear.  

Add the cut brinjals. Fry well till tossed a little. 

Pour 2 tbsps of water. Stir fry well. Close with the lid. And cook for five more minutes in medium flame. 

I changed the contents into the pan and make it well dried and fried to a crisp state. In the kadai, with less oil the brinjals will become more mushy. But in the pan, it swindles well without becoming mushy. 

Stir fry till it becomes dark and dry.

Done! Eat Hot !!
